Chocolate Mint Pudding
Chocolate Mint Pudding
Ingredients
1)3 cups
fat-free milk
2)1/2 cup
packed fresh mint leaves (about 1/2 ounce)
3)2/3 cup
sugar
4)1/4 cup
cornstarch
5)3 tablespoons
unsweetened cocoa
6)1/8 teaspoon
salt
7)3
large egg yolks, lightly beaten
8)1/2 teaspoon
vanilla extract
9)2 ounces
semisweet chocolate, chopped
Preparation
1)Heat milk over medium-high heat in a small, heavy saucepan to 180°
2)Until
tiny bubbles form around edge (do not boil).
3)Remove from heat; add mint.
4) Let stand 15 minutes;
5)Strain milk mixture through a sieve into a bowl, reserving milk.
6)Discard solids. Return milk to pan; stir in sugar, cornstarch, cocoa, and salt.
7) Return pan to medium heat; bring to a boil, stirring constantly with a whisk until mixture thickens.
8)Place egg yolks in a medium bowl; gradually add half of hot milk mixture,
9)Stirring constantly with a whisk.
10) Add egg mixture to pan; bring to a boil, stirring constantly.
11)Cook 1 minute or until thick.
12 Remove from heat; add vanilla and chocolate,
13)Wait until chocolate melts.
14)Pure pudding into a bowl;
15)cover surface of pudding with plastic wrap.
16)Chill. Garnish with mint sprigs, if desired.
